Add chopped onion, bell pepper, celery, and garlic. Sauté until vegetables are soft, about 5 minutes.

Stir in diced tomatoes, tomato sauce, kidney beans, pinto beans, chili powder, cumin, paprika, cayenne (if using), salt, and pepper.
3. Simmer the Chili
Pour in water or beef broth. Bring to a boil, then reduce heat and simmer uncovered for 45–60 minutes, stirring occasionally.
