Ultimate Zucchini & Veggie Patties

Grate the zucchini and carrot. Place zucchini in a clean kitchen towel and squeeze out excess water.

In a large bowl, combine zucchini, carrot, celery, garlic, eggs, cream cheese, breadcrumbs, Italian herbs, paprika, salt, and pepper. Mix until well combined.

Heat a skillet over medium heat and add a drizzle of olive oil.

Scoop portions of the mixture and shape into small patties.

Fry patties for 3–4 minutes per side, or until golden brown and cooked through.

Remove from skillet and drain on paper towels if needed.
