In a small bowl, mix warm water, sugar, and yeast. Let sit 5–10 minutes, until foamy.
In a large bowl, combine flour and salt. Add the yeast mixture and olive oil.
Mix until dough comes together, then knead on a floured surface for about 8–10 minutes, until smooth and elastic.
Place in a greased bowl, cover, and let rise 1–2 hours until doubled in size.
Punch down the dough, divide into 2–4 portions (depending on pizza size), and either use immediately or wrap and freeze for later.
