Preheat Oven
Set oven to 400°F (200°C).
Prepare Chicken
Toss shredded chicken with 1/4 cup of BBQ sauce until evenly coated.
Assemble Flatbreads
Place flatbreads on a baking sheet.
Spread remaining BBQ sauce evenly over each flatbread.
Sprinkle mozzarella and optional cheese over the sauce.
Top with BBQ-coated chicken and sliced red onions.
Bake
Bake for 10–12 minutes, until cheese is melted and bubbly, and edges of flatbread are crisp.
Garnish and Serve
Remove from oven, sprinkle with fresh cilantro, slice, and serve immediately.
