Sweet Potato Rounds with Brie, Cranberry & Pecans

Step 1 – Roast the Sweet Potatoes

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Arrange sweet potato slices on the sheet, brush with olive oil, and season with salt and pepper.

Roast for 20–25 minutes, flipping halfway through, until tender and lightly golden.

Step 2 – Add the Brie

Remove the sweet potato rounds from the oven.

Top each round with a piece of Brie.

Return to the oven for 2–3 minutes, just until the cheese begins to melt.

Step 3 – Add Toppings

Spoon cranberry sauce over the melted Brie.

Sprinkle toasted pecans on top.

Drizzle with honey if desired.

Garnish with fresh thyme or rosemary.
