Prepare the oven and pan: Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper for easy removal.
Make the crust: In a bowl, mix graham cracker crumbs, melted butter, and brown sugar until combined. Press firmly into the bottom of the prepared pan. Bake for 10 minutes, then let cool slightly.
Make the filling: In a mixing bowl, whisk together mashed sweet potatoes, brown sugar, eggs, evaporated milk, vanilla, cinnamon, nutmeg, and salt until smooth and creamy.
Assemble: Pour the filling over the cooled crust, spreading evenly.
Bake: Bake for 35–40 minutes, or until the center is set and a toothpick comes out mostly clean.
Cool & slice: Let the bars cool completely, then refrigerate for at least 1 hour before slicing into squares.
Serve: Top with whipped cream or marshmallow fluff and sprinkle with chopped pecans if desired.
