Prepare the Chicken:
Marinate chicken pieces in buttermilk for at least 30 minutes (or overnight for best results).
Coat the Chicken:
In a shallow dish, combine flour, cornstarch, garlic powder, onion powder, paprika, cayenne, salt, and pepper.
Remove chicken from buttermilk, dredge in flour mixture, pressing to coat well.
Fry Until Crispy:
Heat oil in a deep pan or skillet over medium-high heat.
Fry chicken bites in batches until golden brown and crispy (about 4–5 minutes per batch).
Drain on paper towels.
Make the Sauce:
In a small saucepan, combine honey, soy sauce, sriracha, brown sugar, vinegar, and garlic.
Bring to a simmer, stirring until slightly thickened. Add slurry if you prefer a thicker glaze.
Combine and Serve:
Toss crispy chicken bites in the sweet and spicy sauce until well coated.
Serve hot with sesame seeds and green onions on top (optional).
