Strawberry Shortcake

Preheat oven to 350°F (175°C). Grease and line an 8-inch pan.

Sift together flour, baking powder, and salt.

Beat eggs and sugar with an electric mixer on high for 5–6 minutes until pale and fluffy.

Gently fold in dry ingredients, then add warm milk and vanilla extract. Mix until just combined.

Pour batter into prepared pan and bake 20–25 minutes or until a toothpick comes out clean. Let cool completely.

Make the Strawberry Sauce:

In a saucepan, combine chopped strawberries, sugar, and lemon juice.

Cook over medium heat for 5–7 minutes until softened and juicy. Mash slightly and let cool.
