In a large bowl, combine flour, sugar, yeast, and salt. Add eggs and warm milk. Mix until a sticky dough forms.
Knead and Add Butter:
Knead the dough for 8–10 minutes, gradually adding softened butter. The dough should be smooth and elastic.
First Rise:
Cover the dough and let it rise in a warm place for 1–2 hours, or until doubled in size.
Prepare the Chocolate Filling:
Mix cocoa powder, sugar, and melted butter into a smooth paste. Set aside.
Shape the Brioche:
Roll out the dough into a rectangle. Spread the chocolate filling evenly over the surface. Optional: sprinkle chocolate chips. Roll the dough into a log and cut into desired pieces.
Second Rise:
Place the shaped dough into a greased baking pan. Cover and let rise for 30–45 minutes.
Bake:
Preheat the oven to 350°F (175°C). Brush the top with egg wash. Bake for 25–30 minutes until golden brown and cooked through.
Cool and Serve:
Allow to cool slightly before slicing. Serve warm or at room temperature.
