Rub each piece with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Let rest for 15–30 minutes to absorb flavors.
Step 2 – Prepare the Smoker or Grill
Preheat your smoker or grill to 225–250°F (107–121°C).
Add wood chips (hickory, apple, or cherry) for smoky flavor.
Step 3 – Smoke the Chicken
Place chicken on the smoker/grill grates.
Smoke for 2–3 hours (depending on size and cuts), until internal temperature reaches 165°F (74°C).
Step 4 – Apply BBQ Sauce
