Sear the Beef: Heat olive oil in a pan over medium-high heat. Sear the beef on all sides for about 3 minutes per side to lock in flavor.
Layer in Slow Cooker: Place sliced onions and minced garlic at the bottom of the slow cooker. Lay the seared beef on top.
Add Liquids and Seasonings: Pour in beef broth, Worcestershire sauce, and soy sauce. Sprinkle smoked paprika, thyme, salt, and pepper over the beef.
Add Veggies: Arrange carrots and potatoes around the beef.
Cook: Cover and cook on low for 8–10 hours or high for 5–6 hours, until the beef is tender and easily pulls apart.
Thicken Gravy (Optional): Mix 1 tbsp cornstarch with 2 tbsp water and stir it into the slow cooker during the last 30 minutes for a thicker gravy.
Serve: Shred or slice the beef, serve with vegetables, and spoon the rich gravy over the top.
