Prepare the Sauce: In a small bowl, whisk together honey, garlic, soy sauce, oregano, and ketchup.
Assemble Ingredients: Place chicken thighs, potatoes, carrots, and onions in a 4–6 quart slow cooker. Pour the honey garlic sauce evenly over the top.
Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–3.5 hours.
Add Green Beans & Thicken Sauce: About 20 minutes before serving, add green beans and optional cornstarch slurry. Re-cover and cook for 15–20 minutes until green beans are tender and sauce begins to thicken.
Serve: Remove chicken and vegetables using a slotted spoon. Optional: Broil chicken thighs for 2–3 minutes to brown the skin. Drizzle with sauce and garnish with parsley.
