Simple Sheet Pan Scored Potatoes

Prep the Potatoes: Preheat oven to 400°F (200°C). Wash potatoes well and pat dry. Cut each potato in half lengthwise. Using a sharp knife, score the cut sides in a crisscross pattern, being careful not to cut all the way through.

Season: Place potatoes cut-side up on a sheet pan. In a small bowl, mix olive oil, garlic, paprika, rosemary, salt, and black pepper. Brush generously over the scored sides of the potatoes.

Roast: Bake for 35–40 minutes, or until potatoes are golden brown, crispy on top, and tender inside.

Finish & Serve: Garnish with fresh parsley and serve warm.
