Cut the brie into small pieces and place in a mixing bowl.
Add cream cheese and 2 tbsp heavy cream.
Using a hand mixer or food processor, whip until smooth and creamy. Add more cream if needed for desired consistency. Season lightly with salt.
Make the Chili Oil:
In a small saucepan, heat olive oil over low heat.
Add minced garlic and red chili flakes. Stir for 1–2 minutes until fragrant, being careful not to burn the garlic.
Remove from heat and add smoked paprika if using. Allow to cool slightly.
Assemble the Dish:
Transfer the whipped brie to a serving bowl or plate.
Drizzle the chili oil generously over the top.
Garnish with fresh herbs if desired.

Serve immediately with crusty bread, crackers, or fresh vegetable sticks for dipping.
