Sicilian Chicken Soup

Prepare the Chicken: Rinse the chicken and pat dry. Cut into pieces if desired for quicker cooking.

Sauté Vegetables: In a large pot, heat 1–2 tablespoons olive oil over medium heat. Add onion, celery, carrots, and red bell peppers. Cook for 5–6 minutes until softened.

Add Garlic and Seasoning: Stir in minced garlic, oregano, basil, salt, and pepper. Cook for 1 minute until fragrant.

Add Chicken & Liquids: Place the chicken in the pot. Pour in diced tomatoes and water (or chicken broth) until chicken is mostly covered. Bring to a boil.

Simmer: Reduce heat to low, cover, and simmer for 1–1.5 hours until the chicken is fully cooked and tender.

Add Potatoes: Add diced potatoes and simmer for an additional 20–25 minutes until tender.

Finish & Serve: Taste and adjust seasoning. Remove chicken bones if using whole pieces. Garnish with fresh parsley before serving.
