Sheet-Pan Lemon Chicken with Roasted Veggies & Feta

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Marinate chicken: In a small bowl, whisk together olive oil, lemon juice and zest, garlic, oregano, salt, and pepper. Coat chicken with half of the mixture.

Prep veggies: Spread zucchini, bell pepper, onion, and cherry tomatoes on the sheet pan. Drizzle with the remaining marinade and toss to coat.

Bake: Place chicken on the pan with veggies. Roast for 20–25 minutes, flipping chicken halfway, until fully cooked (internal temp 165°F).

Finish: Sprinkle crumbled feta over the hot dish and garnish with fresh parsley.
