Savory Reuben Egg Rolls

Prepare the Filling: In a bowl, mix together corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing.

Assemble Egg Rolls: Place an egg roll wrapper on a flat surface with a corner facing you. Add 2–3 tablespoons of filling in the center. Fold the bottom corner over the filling, fold in the sides, and roll up tightly. Brush the edges with beaten egg to seal.

Heat Oil: In a deep skillet or fryer, heat oil to 350°F (175°C).

Fry: Fry egg rolls in batches for 3–4 minutes, turning occasionally, until golden brown and crispy.

Drain: Remove and place on paper towels to drain excess oil.

Serve: Enjoy hot with extra Thousand Island dressing for dipping.
