Prepare the Filling
Heat olive oil and butter in a skillet over medium heat.
Add onion, carrot, and celery. Sauté until softened, about 5–7 minutes.
Stir in garlic, salt, and black pepper. Cook for another 1–2 minutes until fragrant.
Remove from heat and let the mixture cool slightly.
Assemble the Hand Pies
Roll out your pastry dough and cut into squares or circles (about 4–5 inches).
Spoon a portion of the cooled filling onto each piece of dough.
Fold the dough over the filling and seal edges with a fork.
