Make Glaze: Whisk together BBQ sauce, soy sauce, honey/maple syrup, apple cider vinegar, garlic powder, and ginger powder.
Crisp Ribs: Increase oven to 200°C (400°F). Brush ribs with glaze and bake 15–20 minutes, brushing every 5–7 minutes until sticky and caramelized.
Cook Potatoes: Toss slices with olive oil, paprika, salt, and pepper. Roast alongside ribs for 20–30 mins or pan-fry 5–7 minutes per side until golden.
Serve: Cut ribs into portions. Arrange with crispy potatoes and garnish with sliced chilies and chopped green onions.
