Prep the Oven & Pan: Preheat oven to 400°F (200°C). Lightly grease a roasting pan with 1 tbsp olive oil.
Prepare the Vegetables: In a large bowl, toss potatoes and onions with 2 tbsp olive oil, minced garlic, salt, and pepper. Spread evenly in the roasting pan.
Season the Lamb Chops: Pat lamb chops dry, then rub with salt, pepper, and optional herbs.
Roast: Place lamb chops on top of the potato-onion mixture. Roast in the preheated oven for 25–35 minutes, turning the potatoes halfway, until lamb is cooked to your preferred doneness and potatoes are golden.
Rest & Serve: Let lamb chops rest for 5 minutes before serving. Serve with roasted potatoes and onions.
