Puff Pastry Zucchini Ribbon Tart with Ricotta & Feta

Step 1 – Prep the Pastry
Preheat oven to 400°F (200°C). Place the puff pastry on a baking tray. Score a 1-inch border around the edges and brush with beaten egg.

Step 2 – Make the Filling
In a bowl, combine ricotta, feta, lemon juice, olive oil, and black pepper. Spread the mixture evenly inside the scored border on the pastry.

Step 3 – Arrange the Zucchini
Layer zucchini ribbons over the cheese filling in waves or spirals. Brush lightly with olive oil and sprinkle thyme on top.

Step 4 – Bake
Bake 18–20 minutes until the pastry is puffed, golden, and the zucchini is tender.

Step 5 – Garnish & Serve
Finish with extra thyme and crumbled feta. Slice and serve warm or at room temperature.
