Preheat your oven to 425°F (220°C).

Prepare the Vegetables
In a large bowl, toss the sliced potatoes and onions with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

Bake
Spread the mixture evenly on a baking sheet in a single layer. Bake for 30–35 minutes, flipping halfway through, until the potatoes are golden and crispy.

Garnish & Serve
Sprinkle with chopped fresh parsley if desired and serve hot as a side dish.
