Season the shrimp: Sprinkle shrimp with salt and black pepper.
Cook the shrimp: Heat 1 tablespoon olive oil in a large skillet or wok. Add shrimp and cook for 2–3 minutes per side, until pink and cooked through. Remove and set aside.
Sauté the aromatics: Add the remaining olive oil to the skillet. Toss in garlic, ginger, and onion. Cook until fragrant.
Stir fry the vegetables: Add bell pepper, carrot, and broccoli. Stir fry for 4–5 minutes until just tender but still crisp.
Combine everything: Return shrimp to the skillet. Add soy sauce, honey, and cashews. Toss well to coat everything in the sauce.
