Homemade Chicken Noodle Soup

In a large pot, heat olive oil or butter over medium heat.

Add onions, carrots, and celery. Cook for 3–5 minutes until softened.

Stir in garlic and thyme, cooking for another 30 seconds until fragrant.

2. Cook the Chicken:

Add the chicken breast to the pot along with the chicken broth.

Bring to a boil, then reduce heat and simmer for 15–20 minutes until the chicken is cooked through.

3. Shred the Chicken:

Remove the chicken from the pot and shred it using two forks. Return shredded chicken to the soup.

4. Cook the Noodles:

Add egg noodles or pasta to the simmering soup. Cook according to package instructions until tender.

5. Season and Serve:

Taste and adjust seasoning with salt and pepper.

Serve hot, garnished with fresh parsley if desired.
