Prepare the Jell-O (if using): In a small bowl, mix the strawberry Jell-O powder with 3–4 tablespoons hot water. It will form a thick paste—this is normal.
Make the Fresh Strawberry Jam (alternative): Place chopped strawberries in a pan with sweetener, cinnamon, and lemon juice. Cook on low-medium heat until it thickens into a jam-like texture. Let cool slightly.
Blend It All: Add cottage cheese, yogurt, and either the Jell-O mixture or strawberry jam into a blender. Blend until smooth and fluffy.
Chill or Freeze: Pour into a dish and refrigerate for at least 1 hour to firm up, or freeze for a creamy ice cream-like dessert.
Serve: Divide into 4 servings. Top with fresh berries, sugar-free graham crackers, or whipped cream if desired.
