In a pot of boiling water, add pork ribs and ginger slices.
Boil for 3–5 minutes, then drain and rinse to remove impurities.

Heat a little oil in a large pot over medium heat.

Return the blanched pork ribs to the pot.
Add corn segments, tomatoes, and rehydrated shiitake mushrooms.
Simmer:
Pour in enough water to cover all ingredients.
Bring to a boil, then reduce heat and simmer for about 45 minutes, until pork ribs are tender.
Season:
Add salt and pepper to taste.
Garnish and Serve:
Sprinkle with chopped spring onions and serve hot.
