In a bowl, mix flour and salt.
Gradually add boiling water, stirring until a dough forms.
Knead lightly until smooth. Cover and set aside.
2. Make the Filling
Heat butter or oil in a pan over medium heat.
Sauté onion and garlic until fragrant.
Add vegetables and cook until slightly softened.
Stir in the flour to make a roux.
Gradually add stock, stirring until thickened.
Add shredded chicken and turkey. Season with salt, pepper, and herbs. Mix well. Remove from heat.
3. Assemble the Pie
Roll out the dough to fit your pie dish.
Fill with the chicken, turkey, and vegetable mixture.
Cover with another layer of dough, sealing edges. Cut a few slits on top for steam to escape.
4. Bake
Preheat oven to 180°C (350°F).
Bake for 30–35 minutes or until golden brown.
