Grilled Honey Balsamic Chicken with Vegetables

In a small bowl, whisk together balsamic vinegar, honey, olive oil, Italian seasoning, salt, and pepper.

2. Marinate the Chicken

Place chicken breasts in a shallow dish or zip-top bag. Pour the marinade over the chicken and let it marinate for at least 30 minutes (up to 2 hours for deeper flavor).

3. Grill the Chicken

Preheat your grill to medium-high heat. Grill the chicken for 6–7 minutes per side, or until fully cooked (internal temperature 165°F / 74°C). Baste occasionally with leftover marinade for extra flavor.

4. Roast or Sauté the Vegetables

While the chicken is grilling, toss broccoli, bell peppers, and zucchini with olive oil, salt, and pepper. Roast in a 400°F (200°C) oven for 15–20 minutes or sauté in a skillet until tender and slightly caramelized.

5. Serve

Plate the grilled chicken alongside the roasted vegetables. Drizzle any remaining glaze over the chicken for an extra burst of flavor.
