Ingredients (Serves 4)
Salad:
250 g (9 oz) halloumi cheese, sliced into 1 cm (½ inch) thick pieces
400 g (14 oz) watermelon, cut into cubes or wedges
100 g (3.5 oz) fresh arugula
1 small cucumber (120 g / 4 oz), thinly sliced
2 tablespoons (30 g) roasted pumpkin seeds or sunflower seeds (optional)
Lime-Mint Dressing:
Juice of 2 limes (about 60 ml / ¼ cup)
3 tablespoons (45 ml) olive oil
1 tablespoon (15 ml) honey or agave syrup
2 tablespoons (10 g) fresh mint leaves, finely chopped
Salt and freshly ground black pepper, to taste
