Grilled Halloumi & Watermelon Salad with Arugula and Lime-Mint Dressing

Preheat a grill pan over medium-high heat.

Grill halloumi slices for 2–3 minutes on each side until golden and lightly charred. Set aside.

Prepare the Salad:

In a large bowl, combine watermelon cubes, arugula, cucumber, and grilled halloumi.

Make the Dressing:

Whisk together lime juice, olive oil, honey, mint, salt, and pepper until emulsified.

Assemble and Serve:

Drizzle the dressing over the salad and toss gently to combine.

Sprinkle with roasted seeds if desired and serve immediately.
