Golden Twisted Doughnuts

Activate the Yeast: In a small bowl, combine warm water, warm milk, yeast, and 1 tablespoon of sugar. Let sit for 5–10 minutes until frothy.

Make the Dough: In a large mixing bowl, whisk together flour, remaining sugar, and salt. Add yeast mixture, eggs, and butter. Mix until dough comes together.

Knead: Knead the dough on a floured surface for 8–10 minutes (or use a stand mixer with a dough hook for 5 minutes) until smooth and elastic.

First Rise: Place dough in a greased bowl, cover, and let rise in a warm place for 1–2 hours, or until doubled in size.

Shape the Doughnuts: Punch down the dough and divide into 12–14 pieces. Roll each piece into a rope about 8 inches long, then twist and pinch the ends to form a spiral.

Second Rise: Place twisted doughnuts on a lined tray, cover lightly, and let rise again for 30–40 minutes.

Fry: Heat oil in a deep pan to 350°F (175°C). Fry doughnuts in batches for 2–3 minutes per side, until golden brown. Remove and drain on paper towels.

Finish: Roll warm doughnuts in sugar or drizzle with glaze before serving.
