Preheat your oven to 200°C (400°F).
Prepare Chicken & Potatoes
In a large bowl, combine olive oil, minced garlic, paprika, thyme, salt, and pepper. Add chicken and potato pieces, tossing to coat evenly.
Arrange on Baking Tray
Spread the chicken and potatoes in a single layer on a baking sheet or roasting pan. Make sure chicken skin faces up for maximum crispiness.
Roast
Bake for 40–50 minutes, flipping potatoes halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden brown and tender.
Serve
Transfer to plates and garnish with fresh parsley if desired. Serve hot with a side salad or steamed vegetables.
