2. Make the Parmesan Fries
Preheat oven to 400°F (200°C).
In a large bowl, toss cut potatoes with olive oil, Parmesan, garlic powder, paprika, salt, and pepper.
Spread fries in a single layer on a baking sheet and bake for 20–25 minutes, flipping halfway through until golden and crispy.

Heat olive oil in a heavy-bottomed skillet (preferably cast iron) over medium-high heat.
Sear the marinated steak for 3–4 minutes per side for medium-rare (adjust for desired doneness).
Let the steak rest for 5–10 minutes before slicing against the grain.
