Garlic Butter Shrimp with Mashed Potatoes & Stir-Fried Veggies

2 medium potatoes, peeled and cubed

1 tbsp butter

2–3 tbsp milk or cream

Salt & pepper, to taste

Stir-Fried Vegetables

½ cup broccoli florets

½ red bell pepper, sliced

½ yellow or green bell pepper, sliced

1 tsp olive oil

Salt, pepper & garlic powder, to taste

Directions

Cook the Mashed Potatoes:

Boil potatoes in salted water for 12–15 minutes until tender.

Drain, then mash with butter and milk. Season with salt and pepper.

Stir-Fry the Vegetables:

Heat olive oil in a skillet over medium heat.

Add broccoli and bell peppers, season with salt, pepper, and garlic powder.

Stir-fry 5–7 minutes until crisp-tender.
