Forgotten Chicken and Rice

Preheat Oven: Set oven to 375°F (190°C).

Prepare Chicken: Season chicken breasts with salt, pepper, paprika, and thyme. Heat olive oil or butter in a skillet over medium-high heat and sear chicken 2–3 minutes per side until lightly golden (it will finish cooking in the oven).

Mix Rice and Soup: In a large baking dish, combine rice, cream of mushroom soup, and chicken broth. Stir until well blended.

Combine: Place seared chicken breasts on top of the rice mixture. Cover the dish tightly with foil.

Bake: Bake for 35–40 minutes, or until the rice is tender and the chicken is cooked through (internal temperature 165°F / 74°C).

Serve: Garnish with chopped parsley if desired. Serve warm.
