Famous Cream Puffs

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Make the Dough:
In a medium saucepan, combine butter and water. Bring to a boil. Remove from heat, add vanilla, and stir in flour all at once until the mixture forms a ball and pulls away from the sides of the pan.

Add Eggs:
Let the dough cool slightly (about 5 minutes). Add eggs one at a time, beating well after each addition until smooth and glossy.

Shape the Puffs:
Drop rounded tablespoonfuls (or pipe with a pastry bag) onto the prepared baking sheet, spacing them about 2 inches apart.

Bake:
Bake for 25–30 minutes, until golden brown and puffed. Do not open the oven door during baking. Remove and cool completely.

Prepare the Filling:
In a bowl, whisk pudding mix with milk until thickened. Fold in whipped cream if using, for a lighter texture.

Fill the Puffs:
Slice cooled puffs in half and spoon or pipe filling into the center. Replace tops.

Finish:
Dust with powdered sugar before serving.
