Preheat oven to 400°F (200°C).
On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.
Spread the vegetable-cheese filling in the center, leaving a 2-inch border around the edges.
Fold the edges of the dough over the filling, pleating as necessary. Brush the crust with the egg wash.
Bake:
Bake in the preheated oven for 30–35 minutes, or until the crust is golden brown and crisp.
Allow the galette to cool slightly before slicing.
