Eggy Potato and Minced Meat Delight

Prepare the Potatoes: Heat 1 tablespoon of oil or butter in a large skillet. Add the diced potatoes and cook until golden and crispy, about 8–10 minutes. Remove and set aside.

Cook the Meat: In the same skillet, add another tablespoon of oil if needed. Sauté the onion until soft, then add the minced meat. Season with garlic powder, paprika, salt, and pepper. Cook until browned and fully cooked through.

Combine: Add the crispy potatoes back into the skillet with the meat. Mix gently so everything is evenly combined.

Add the Eggs: Make small wells in the mixture and crack in the eggs. Cover with a lid and cook until the egg whites are set but the yolks are still runny, about 3–4 minutes.

Finish & Serve: Sprinkle with fresh herbs and serve hot straight from the skillet.
