Sear the Beef:
Heat olive oil in a pan over medium-high heat. Brown the beef on all sides, about 3 minutes per side. This locks in the flavor.
Prepare the Slow Cooker:
Place the sliced onions and minced garlic at the bottom of the slow cooker. Lay the seared beef on top.
Add Liquids and Seasoning:
Pour in the beef broth, Worcestershire sauce, and soy sauce. Sprinkle paprika, thyme, salt, and black pepper evenly over the roast.
Add Vegetables:
Arrange the carrots and potatoes around the beef.
Cook:
Cover and cook on low for 8–10 hours or high for 5–6 hours, until the beef is tender and easily pulls apart.
