Step 1 – Preheat and Prepare
Preheat your oven to 400°F (200°C).
Pat the chicken dry with paper towels to help it crisp up during roasting.
Step 2 – Season the Chicken
Rub olive oil over the chicken pieces.
Sprinkle with salt, pepper, thyme, rosemary, and garlic. Massage seasonings into the meat and under the skin for maximum flavor.
Step 3 – Roast the Chicken
Place the chicken in a single layer on a baking tray or oven-safe skillet.
Roast for 35–45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
