Easy One-Pot Beef Stew

Sear the Beef: Heat olive oil in a large pot over medium-high heat. Brown the beef cubes on all sides, about 3–4 minutes per side.

Sauté Aromatics: Add the onion and garlic to the pot. Cook for 2 minutes until fragrant.

Add Liquid & Seasoning: Pour in the beef broth, diced tomatoes, and Worcestershire sauce. Stir in smoked paprika, thyme, salt, and pepper.

Add Vegetables: Mix in carrots and potatoes. Cover and simmer on low heat for 1.5–2 hours, stirring occasionally, until beef is tender.

Thicken (Optional): Mix cornstarch with cold water and stir into the stew. Cook an additional 5 minutes until gravy thickens.
