Heat a skillet over medium heat and add a little olive oil.
Sauté chopped onion and garlic until soft and fragrant.
Add ground beef, chili powder, cumin, salt, and pepper. Cook until browned and fully cooked.
Remove from heat and stir in ½ cup shredded cheddar cheese for extra creaminess.
2. Assemble the Enchiladas
Preheat oven to 375°F (190°C).
Spread a thin layer of enchilada sauce on the bottom of a baking dish.
Warm the tortillas slightly to make them pliable.
Spoon a portion of the beef mixture onto each tortilla, roll it up, and place it seam-side down in the dish.
Pour remaining enchilada sauce evenly over the rolled tortillas.
Sprinkle remaining cheddar cheese on top.
3. Bake
Cover with foil and bake for 15–20 minutes.
Remove the foil and bake an additional 5–10 minutes until the cheese is melted and bubbly.
4. Serve
