Crispy Zucchini Patties with Fresh Herbs

Prepare the Zucchini: Grate the zucchini and place in a clean kitchen towel. Squeeze out excess moisture to prevent soggy patties.

Mix Ingredients: In a large bowl, combine grated zucchini, chopped onion, garlic (if using), herbs, egg, flour, salt, and pepper. Mix until well incorporated.

Shape Patties: Form small patties using your hands, about 2–3 inches in diameter.

Cook Patties: Heat a non-stick skillet over medium heat and add a little olive oil. Fry patties for 3–4 minutes per side, until golden brown and crisp.

Drain: Remove and place on paper towels to drain excess oil.
