Crispy Parmesan Smashed Potatoes

Place baby potatoes in a pot of salted water.

Bring to a boil and cook until tender, about 15–20 minutes. Drain and let them cool slightly.

Preheat Oven:

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Smash the Potatoes:

Place potatoes on the baking sheet.

Use a potato masher or the bottom of a glass to gently press each potato until flattened but still intact.

Season & Bake:

Drizzle olive oil over the smashed potatoes.

Sprinkle garlic powder, Parmesan cheese, salt, and pepper evenly.

Bake for 20–25 minutes until golden and crispy.

Serve:

Garnish with chopped fresh parsley if desired. Serve hot.
