Crispy Golden Honeycomb Candy

Line a baking sheet with parchment paper or lightly grease it.

Cook the Sugar Mixture:
In a medium saucepan, combine sugar, corn syrup, honey, and water. Cook over medium heat, stirring gently until sugar dissolves. Bring to a boil and cook without stirring until the mixture reaches 300°F (hard crack stage) on a candy thermometer.

Add Baking Soda:
Remove from heat and quickly whisk in the sifted baking soda (and vanilla if using). The mixture will foam up and lighten in color.

Pour and Set:
Immediately pour the foamy mixture onto the prepared baking sheet. Do not spread it—let it self-level.

Cool and Break:
Allow the honeycomb to cool completely at room temperature. Once hardened, break into bite-sized pieces.
