Crispy Fried Chicken with Creamy Mashed Potatoes

1. Prepare the Fried Chicken:

Pat chicken pieces dry and season with salt, pepper, and paprika.

In a shallow bowl, mix flour, garlic powder, and onion powder.

Dredge the chicken pieces in the seasoned flour, pressing lightly to coat evenly.

Heat vegetable oil in a large skillet or deep fryer over medium-high heat.

Fry chicken pieces for 12–15 minutes per side, or until golden brown and cooked through (internal temperature 165°F / 74°C).

Remove chicken and place on a paper towel-lined plate to drain excess oil.

2. Make the Mashed Potatoes:

Boil cubed potatoes in salted water until tender, about 15–20 minutes.

Drain the potatoes and return them to the pot.

Mash the potatoes using a masher or fork.

Add butter and milk, and continue mashing until smooth and creamy.

Season with salt, pepper, and optional garlic powder.

Garnish with chopped parsley if desired.
