Heat olive oil in a skillet over medium heat.
Add onion and bell pepper; sauté until softened.
Stir in garlic, then add sliced beef. Cook until just browned. Remove from heat.
Assemble Egg Rolls:
Lay an egg roll wrapper on a flat surface with one corner pointing toward you.
Add a spoonful of beef mixture and sprinkle cheese on top.
Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Brush the edges with beaten egg to seal.
Fry:
Heat oil to 350°F (175°C).
Fry egg rolls in batches for 3–4 minutes or until golden brown and crispy.
Drain on paper towels.
Serve:
Slice diagonally and serve hot with cheese sauce or spicy mayo for dipping.
