In a medium bowl or jar, whisk together chia seeds, milk, sweetener, and vanilla.
Stir well, making sure the chia seeds don’t clump together.
Cover and refrigerate for at least 2 hours, or overnight, until the mixture thickens into a pudding-like consistency.
Stir again before serving.
Top with fruit, nuts, or granola and enjoy chilled.
