Prepare the Meatloaf Mixture
In a large bowl, combine crushed Ritz crackers, eggs, milk, chopped onion, shredded cheddar, salt, and pepper. Mix until well combined.
Add Ground Beef
Add the ground beef to the mixture. Gently mix until fully incorporated, being careful not to overwork the meat.
Shape and Place in Pan
Transfer the mixture into the prepared loaf pan, pressing it down evenly.
Optional Topping
Spread a thin layer of ketchup or barbecue sauce on top for added flavor and a nice glaze.
Bake
Bake for 60–70 minutes, or until the internal temperature reaches 160°F (71°C).
Rest and Serve
Allow the meatloaf to rest for 10 minutes before slicing. Serve warm with mashed potatoes, green beans, or your favorite side dishes.
