In a large bowl, combine warm water, light brown sugar, and yeast. Let sit 5 minutes until frothy.
Add melted butter, sea salt, and 4 ½ cups flour. Mix until a dough forms. Knead for 8 minutes until smooth and elastic, adding more flour if needed.
Cover with a damp cloth and let rise for 1 hour, until doubled in size.
Step 2: Make the Cookie Dough
Whisk together flour, baking soda, and salt. Set aside.
In a large bowl, cream butter, granulated sugar, brown sugar, and vanilla until fluffy.
Add eggs one at a time, mixing well. Gradually add dry ingredients, then fold in chocolate chips. Set aside.
Step 3: Form the Pretzels
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Punch down the pretzel dough and divide into 8 portions. Roll each into an 18-inch rope.
Flatten slightly, place a scoop of cookie dough in the center, fold the dough over, and seal tightly. Shape into pretzels and place on the baking sheet.
Step 4: Bake the Pretzels
Brush each pretzel with the beaten egg and sprinkle with coarse sea salt.
Bake for 15–18 minutes, or until golden brown.
